Everyone here will advise to buy stainless steel and carbon steel. Like DeBuyer, LeCreuset, Cristel, etc. And indeed these are pro tools, BIFL, but only with the appropriate care, knowing that some of them don't go in the dishwasher, and that they are heavy. However if you still want the practicality of non stick, light weight, dishwasher ability, you can compromise a bit on BIFL by buying a good quality non-stick, Like Tefal Titanium 6x, Lagostina Mineralia, only the "made in France" models, or other quality brands with this "titanium" grade thing (more a marketing name though). I have 2 Tefal Titanium 3x that I have used for 20 years multiple times per week. Sure they are not as pristine as before but they do the job. When I wanted to change for one of those BIFL stainless steel pans I first asked my friends who are pro cooks, and they surprised me when saying that at home they use those one and not the stainless steel, carbon steel ones. Other non-stick I used were dead after a few years, including a Tefal (non-Titanium) made in China. Also of course in a non-stick you don't use metal ustensils otherwise you still end up scratching them. One thing I learned as well is that either stainless steel or non stick can be better depending on what you cook. Ideally to have a set of some stainless/carbon steel, and a set of quality non-stick.
