Quality stainless steel and cast iron are all you’ll ever need and should last forever. Enameled cast iron for stews etc and a quality stainless pot for boiling water for pasta, corn etc.

Don’t buy a set. Waste of money and space. Look at the pans you currently have and use, and buy better versions of those. I have several pans and accessories that I never use that came in a set. You can always add one or two more pieces later on. Fully clad stainless steel is pretty great. My pans are calphalon and very solid, if not slightly less aesthetically pleasing as All Clad.

The more expensive line of Calphalon lasted 12 years. The nonstick was still good when I replaced it, I was just annoyed at the ugly scorch marks on the bottom outside of the pan. Don’t use nonstick spray and keep the heat lower than you think you need, especially on a gas range. I can boil water at medium heat on a gas range. Don’t use metal utensils.
